Red Bean Salad
Red Bean Salad from These Old Cookbooks
Ingredients:
- 15 oz. can red kidney beans, drained and rinsed
- 2 hard boiled eggs chopped
- 1/8 cup pickle relish
- 1/4 cup low-fat mayonnaise
- Salt and pepper to taste
Directions:
- Combine all ingredients
- Cover & refrigerate for minimum 2 hours before serving
